This study assessed the physicochemical parameters, water distribution, and metabolic profiles of wet- and dry-aged dark-cutting Nellore beef meat using TD-NMR and ¹H NMR techniques alongside chemometric analysis. We analysed eight Nellore carcasses (Longissimus lumborum) aged for 28 days using both wet and dry methods. Post-aging, we noted significant reductions in water activity and moisture content in dry-aged samples, while lipid levels remained largely unchanged compared to unaged samples....
[NMR paper] Low-Field NMR Analysis of Chicken Patties Prepared with Woody Breast Meat and Implications to Meat Quality
Low-Field NMR Analysis of Chicken Patties Prepared with Woody Breast Meat and Implications to Meat Quality
The scope of this paper was to investigate the effects of water distribution differences on the quality and feasibility of chicken patties supplemented with woody breast (WB). Chicken patties, containing differing amounts of WB (0%, 25%, 50%, 75%, 100%) were analyzed using low-field NMR. Quality differences between chicken patties were further evaluated by combining lipid and protein properties, fry loss (FL), color (L*, a*, b*), texture (hardness, springiness, chewiness,...

[NMR paper] (1)H-NMR-Based Metabolomics: An Integrated Approach for the Detection of the Adulteration in Chicken, Chevon, Beef and Donkey Meat
(1)H-NMR-Based Metabolomics: An Integrated Approach for the Detection of the Adulteration in Chicken, Chevon, Beef and Donkey Meat
Meat is a rich source of energy that provides high-value animal protein, fats, vitamins, minerals and trace amounts of carbohydrates. Globally, different types of meats are consumed to fulfill nutritional requirements. However, the increasing burden on the livestock industry has triggered the mixing of high-price meat species with low-quality/-price meat. This work aimed to differentiate different meat samples on the basis of metabolites. The metabolic...

Diamonds are for NMR: Cutting costs
Diamonds are for NMR: Cutting costs
http://www.spectroscopynow.com/common/images/thumbnails/1638d332509.jpg Diamonds are relatively inexpensive when compared to making and sustaining superconducting magnets. As such, new research offers the possibility of a very-low-cost alternative to multimillion-dollar magnetic resonance imaging (MRI) equipment and the costly nuclear magnetic resonance spectrometers used in drug discovery and other areas by using the former to preclude the need for the latter.
